3 Easy Steps

Step 1: Soften
Add cube(s) to a pan on a low heat with approx. 2 tbsps of water per cube and soften.

Step 2: Spice
Add your choice of Additional Ingredients i.e curry powder, cream, extra chilli and taste the base - tweak as needed.

Step 3: Simmer
Add your meat / veg / fish / cooked lentils and allow to cook through.

It's no Secret
Nothing beats Mum’s Cooking
As a university student living away from my family, I often craved my mum’s home cooked food, sometimes for comfort, sometimes for hunger but always for the taste. My mum started batch cooking her curry base and would freeze it into those silver foil take away containers that we all know. I would receive a delivery of these wonderful base sauces and fill my university freezer with them. When I felt the need, I used to pop one into a pan to soften then add some chicken. Within minutes I had my mum’s amazing delicious chicken curry in front of me.
Becoming a Mum
Becoming a mother myself and trying my best to feed the children wholesome food, I found myself batch making this exact same base for those days where I was strapped for time or just too tired to make anything. I regularly dip into my freezer and pull out a pre portioned base and add protein or vegetables and my children’s dinner would be made without any hassle and I was comforted knowing that they had eaten well.
It’s not a secret!
I know for a fact that there are plenty of other mothers (and some fathers too) up and down the country that batch cook this exact same base. There is truly no secret to cooking this traditional Punjabi curry base but it is somewhat a labour of love involving time and effort to prepare and cook. Not anymore. I have worked hard to keep this recipe and the ingredients list exactly how it would be if I made it at home in my own kitchen. The taste of a good curry comes from the base and that’s where all the effort lies.
I’ve done the hard bit … now all that’s left is the fun and easy part – finish off the dish as you desire.
